"This wine needs a nice long breather before drinking. If you hit this right away upon opening, it just doesn't really taste all that great. Give it a good evening to breath and you'll have a much nicer bottle of wine. Much longer than I prefer to have to wait on my wine, but will make for a pleasant drink the next day if you have any left over from your previous evening's meal. At least give it a good half an hour so as not to have to taste those things that need to evaporate. Once they float away, this will be much mellower and smoother to the palate. Makes for a nice pairing with a meal. On the dry side without being too dry."
